In the Penn Quarter, just minutes from the Smithsonian Museums and the National Gallery of Art, is a sprightly spot that puts a spin on traditional Latin American and Asian cuisine. The chef and culinary innovator that brought forth DC’s Spanish gem, Jaleo, is the visionary behind China Chilcano’s Peruvian perfection. China Chilcano’s menu fuses the flavors of Peruvian Criollo, Chinese Chifa, and Japanese Nikkei to create an explosive tasting experience. The front of the restaurant is bright and open as white paint reflects the natural light let in by tall windows. However, with each step toward the center, the space grows more and more vivid. Scarlet hues appear on light fixtures, suspended wooden pallets, and a large back wall. The food it serves is as bright and colorful as the space in which it is served. Signature dishes include Criollo chifles and anticuchos, Chia dumplings, dim sum, and stir-fry, and Asian-style ceviches
